There are salad recipes galore online but most of them require a lot of ingredients and tons of prep. For someone with little patience, eating salad often means a boring bowl of raw greens. I found a really easy and delicious 3 ingredient fall salad recipe that uses my favorite arugula leaves, mushrooms and crumbled feta cheese. The nutty and slightly bitter taste of arugula pairs nicely with mushrooms and feta.
- Thinly slice 1 large portabella mushroom or 6 small mushrooms.
- On low heat add 1 tablespoon of extra virgin olive oil to a non-stick pan.
- Immediately add in the mushrooms and lightly sauté.
- In a strainer wash two heaping handfuls of arugula greens and dry.
- Once mushrooms start to sweat, add the arugula.
- Drizzle 1 tablespoon of balsamic vinegar and a lot of black pepper over the greens and stir until arugula jussssst starts to become limp.
- Serve in a large bowl and top with 1 tablespoon of crumbled feta cheese.
- Add another teaspoon of olive oil (if desired).
